Make the sauce
Add apricot preserves, Dijon mustard, cayenne pepper and ginger to a pot on the stove over low-medium heat. Warm until the sauce begins to bubble, stirring occasionally. Remove from the heat.
Step 2
Grill the Pineapple
Remove the skin and core the pineapple using a pineapple corer or knife. Slice the pineapple into 1/2-inch thick rings or slices. Heat a grill pan on the stove over high heat or use an outside grill. When the grill is hot, brush or spray with cooking oil. Place the pineapple on the grill and cook for 30 seconds or until you see grill marks. Flip the pineapple over and cook another 30 seconds. Remove the pineapple from the grill and slice into 1-inch squares.
Step 3
Heat the Kielbasa
Cut the kielbasa into 1/2-inch thick slices. Add 1 tbsp of the cooking oil to a pan on the stove over high heat. When the oil is hot, add the kielbasa slices. Flash cook the kielbasa for 2 minutes, flipping every 30 seconds. Remove from the heat.
Step 4
Assemble
Using a toothpick, spear a slice of the grilled pineapple and then a slice of the kielbasa. Dip the kielbasa into the sauce and then plate.
