Tips:

  • Shrimp heads have a lot of flavor that help the complexity of the lemongrass dressing. If you can’t find head-on shrimp, buy shrimp tails and use the shells for the flavoring.
  • Leftover lemongrass dressing will keep in the refrigerator for about a week.
